Journey of the Sugar Maple part 3- Tapping: Although Maple trees are prevalent throughout the world maple sugaring is unique to the northern part of the Americas where the Sugar Maple and Black Maple are indigenous to the area. These species in combination with the relatively warm days and cool nights make for excellent sap production, ideal for sugaring. The sugar laden sap that was stored in the roots of the maple trees throughout the winter in an effort to prevent their roots from freezing through, as the ground frost sets in. It isn't until the spring thaw that the sap starts to run through the trunk of the tree breathing life into the branches extending from the top of the tree. This is when the sugarmaker will tap the trees to collect the sweet sap. Trees considered strong enough to withstand tapping without life threatening damage must be at least 10 inches in diameter at chest height. After assessing the tree's size the sugarmaker makes a bore in the tree from the same height at which he assessed the size, and taps in a spigot into the bore with a large headed hammer. A bucket or a bag is hung underneath the spigot to collect the sap. A tree will only be tapped once a year as to not draw too much of the energy rich sap vital to the trees survival. Each tap hole will create 8-10 gallons of sap during the season. The sap runs during the warm weather and settles during the cool nights, at peak running periods the sap bucket must be emptied several times a day. After an adequate amount of sap is gathered the alchemy begins in the conversion of sap to syrup...

Gary Marshall a legendary actor, producer, comedian, director, and all around film legend has passed away today. He had his hand on the pulse of what folks in the 70's and 80's loved to watch as they gathered around the tube Saturday night. Gary was responsible for such classics as Happy Days, Laverne and Shirley, Mork and Mindy, The Lucy Show, The Odd Couple, Pretty Woman, and many others. So to the Man who gave us the Fonz and consequently responsible for many broken jukebox's in ice cream parlors across the nation we say thank you and ayyyyyyyyyy.

Journey of the Sugar Maple Part 2: In our continuation of paying tribute to one of Maine's best resources and a crucial ingredient in our Maple popcorn we will discuss legend behind the earliest reference to syrup from the maple trees. Early myths about the Maple trees date back as far as 1557 from the First Peoples of the Americas including those of the Abanaki people. The Legend goes that the creator made life far too easy for the people who inherited the land by filling the trees with thick syrups that flowed year round. One day, Glooskap, the mischievous creator traveled to the fringe of the tribal community at the wood's edge and noticed that one of his villages was strangely silent. The cooking fires cold and still and the gardens over run by Crabgrass and Chickweed. As he ventured closer to the edge of the forest he noticed something strange, the entirety of the village lie on their backs below the Maple Trees letting the thick delicious syrup trickle down their gullets. This would not stand for if the hunters were to become heavy they would not be able to down their game and the women and children would no longer be able to harvest their crops for there were none. Without proper nutrition his beloved people would surely die. So with his endless power to create, change, and destroy he willed water from the nearby lake to flood the roots of the maples forever thinning the syrup to a water bitter sap. He told them they would have to hunt and fish and tend their gardens for sustenance. He promised that the sap would run again, but only during the winter when game is scarce, the lake is frozen, and crops do not grow. Journey of the Sugar Maple Part 1: One of our signature flavors of popcorn is Maple. We use a real Maine Maple Syrup that caramelizes to the exterior of the kernel. We put a lot of hard labor and love into creating great flavors daily but these ongoing posts are going to pay tribute to the artisans behind the Maine Made Maple syrup that we use. First we must begin with the King itself and the real laborer behind Maple Syrup, The Sugar Maple. The Sugar Maple or Rock Maple is a deciduous tree that favors cooler climates reaching heights of 85-115ft on average. It is extremely important to the ecosystems of the Northeast, providing shade, shelter, habitat, and sustenance to other species of plants and animals. This tree although stately in the summer and sexy in the fall, performs a lot of its magic during the winter and spring months. During the winter months it store's its carbohydrate laden starch present throughout the tree in it's shallow root system as an anti-freezing agent as to protect the root system, its lifeblood, from freezing over during the harsh New England winters. As the tree begins to thaw in the spring time the carbohydrate (sugar) laden starch begins to flow up through the tree to provide energy to it's emerging buds. At this point human hands will come into play....

Its wicked hot and humid out there today! Beat the heat and grab a frozen lemonade. I watched Craig squeeze the lemonade, I guess I could have offered to help thinking back on it now... but none the less we are serving them all day from 11 to 9 and while you are here might as well grab some popcorn be it a free sample or a tub unfortunately those are not free but are very reasonably priced, we'd like them to be free one day but the economy the way it is....what can you do? This evening marks the departure of a radio legend Garrison Keillor. Hosting the show, A Prairie Home Companion since 1974 he has brought warmth an joy through the analog medium of radio. Tonight at 6 NPR will air his final hosting of PHC. So come down and grab a large container of caramel corn and gather round the radio like we did back in the day so you can enjoy Guy Noir, The Ketchup Advisory Board, and the news from lake Wobegon where all the women are strong, all the men are good looking, and all the children are above average.
